Salmon with Lemon Butter Soy Sauce

salmon fillets 2 (260-280g)
Potatoes 2 (200-220g)
parsley (minced) 2g
a pinch of salt
a pinch of black pepper
flour as needed
olive oil 2 tbsp
lemon slices 2
For the Sauce: (A)
KIKKOMAN Less Salt Soy Sauce 1 tbsp
butter 25g
sugar ½ tbsp
lemon juice 1tbsp
  1. Wash the potatoes thoroughly, slice them into 8mm thick rounds, soak in water for about 10 minutes, drain and pat dry. Arrange the slices in a heatproof dish, cover loosely with plastic wrap, and microwave (500W) for 3 minutes and 30 seconds.
    Season the salmon with salt and pepper, and lightly coat with flour.
  2. Heat olive oil in a frying pan over medium heat, and arrange the potatoes in the pan. Cook for 3–4 minutes, or until both sides are lightly browned. Remove the potatoes from the pan, leaving the oil behind.
  3. In the same frying pan, arrange the salmon fillets. While cooking, spoon some of the oil over the surface of the salmon. Cook for about 5 minutes, or until both sides are lightly browned. Remove excess oil with paper towels.
  4. Add (A) and cook for about 1 minute, spooning the sauce over the surface of the salmon as the butter melts.
  5. Transfer the potatoes, salmon, and lemon to a serving dish in that order. Drizzle on the sauce and sprinkle with parsley.
